Making It Work


This summer, we started taking our girls out for dinner 1:1, and it’s been such a rewarding experience that we’ll keep doing it until they refuse to get in the car with us.⠀ I am disappointed that I forgot to snap a picture of what I ordered because the aftermath was hilarious. At the end, even my husband was like...how did we spend $60 at a Mexican restaurant and only feed 3 people?’ ⠀ Truthfully, it isn’t the most budget-friendly way to approach a meal out, but it works for me and our chickens have never once complained about the leftovers.⠀ So I ordered🚨2🚨entrees. Yes Señor, they are both for me 📣 (Señor confirmed this twice)⠀ 🌮Quesadilla Mexicali - I requested no cheese sauce, then ate the entire quesadilla - chicken, beans and cheese. Ignored the rice, sour cream and guacamole it came with it but used the lettuce and added salsa on top.⠀ 🥗El Tesoro Salad - ate half the generous portion of chicken and all the greens, cucumbers, spinach, pico and cheese. Also added the salsa that came with our chips. No dressing or avocado needed. There was plenty of flavor and fat in the seasoned chicken. ⠀ 🥖Chips at the table - I ate two with salsa while they were warm. Ok, this took some discipline. But we can do hard things. ⠀ 🍦My daughter and husband wanted Cold Stone but that version of ice cream isn’t worth it to me when I know I have chocolate waiting for me at home! Choices 🤷🏼‍♀️⠀ How did I track this? I didn’t. I ate how I normally would throughout the day, and simply had a different, albeit bigger, dinner.⠀ How did I feel when I woke up? Fine. How did I look? Exactly the same.⠀ I ate 💯 what I wanted and had the best time with my husband and middle child, who not-so-subtly requires just a little bit extra time for it to feel ‘fair’ to her 👩‍❤️‍👩⠀ Literally had my fiesta and ate it too.

Counting macros is not a lifelong commitment for me, but it has taught me SO MUCH about how to maintain a balanced lifestyle...one that will forever include Mexican dinners, Christmas cookies, family picnics and anything else I chose to celebrate. ⠀ What’s something that sparks joy that you working into your weekend?!
